Decadent chocolate cookie bars layered with cherry pie filling and whipped cream - a playful twist on Black Forest Cake.
Ingredients:
  • 1 (17.5 ounce) package double chocolate-chunk cookie mix
  • 0.25 cup vegetable oil
  • 1 egg, at room temperature
  • 1 (21 ounce) can cherry pie filling, divided
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C, and lightly spray a 9x13-inch baking pan with cooking spray.
  • Combine cookie mix, oil, and egg in a large bowl until a soft dough forms. Use 3 heaping tablespoons of dough per cookie, placing them 2 inches apart on an ungreased baking sheet.
  • Bake cookies in the preheated oven for 12 to 13 minutes until set. Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely for about 15 minutes.
  • Evenly press the remaining dough into the bottom of the baking pan.
  • Pour 1 cup of cherry pie filling into a small bowl. Cover it with plastic wrap and chill in the refrigerator for the topping later.
  • Using an electric mixer on medium speed, blend cream cheese, the rest of the cherry pie filling, and white sugar in a large bowl for about 2 minutes until well combined. Spread the cream cheese mixture over the dough.
  • Bake in the preheated oven until firm, for 35 to 40 minutes. Allow to cool for about 30 minutes, then refrigerate until cold, for about 1 hour.
  • Smooth the whipped topping over the cream cheese layer, dollop spoonfuls of the reserved pie filling on top, and scatter crumbled cookies over it. Refrigerate for at least 1 hour to allow the flavors to meld, then cut into 20 bars.
