Ingredients:
  • 175g olive
  • 4 anchovy fillets, drained on paper towel, coarsely chopped
  • 20.00 ml drained capers
  • 1 garlic clove, finely chopped
  • 60ml olive oil
Instructions:
  • Combine olives, anchovy, capers, and garlic in a food processor until finely chopped. Alternatively, use a mortar and pestle for a more traditional approach.
  • While the motor is running, slowly pour in the oil in a smooth, steady stream until a silky paste is formed.
  • Place tapenade in an airtight container and generously cover the surface with extra oil to prevent oxidation.
