Black-Eyed Peas with Leftover Smoked Ham

Celebrate the new year with a tasty black-eyed peas and leftover ham dish.
Ingredients:
  • 3 tablespoons bacon drippings
  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth, or more to taste
  • 1 (16 ounce) package dried black-eyed peas
  • 2 pounds diced smoked ham
  • 1 (8 ounce) can tomato sauce
  • 2 bay leaves
  • 2 tablespoons smoked paprika, or to taste
  • 2 tablespoons chili powder, or to taste
  • 1.5 teaspoons ground white pepper
Instructions:
  • In a large pot, heat bacon drippings over medium heat. Saute onion and celery until softened, about 3-4 minutes. Stir in garlic and cook until fragrant, about 1 minute. Increase heat to medium-high and add chicken broth and peas.
  • Enhance the flavors by introducing ham, tomato sauce, bay leaves, and half the amount of paprika, chili powder, white pepper, and oregano. Let the mixture come to a boil. Lower the heat, cover, and gently simmer until the beans are tender, approximately 1 hour and 45 minutes. Then, add the remaining spices, season with salt and black pepper, and continue cooking uncovered for an additional 30 minutes.
  • Before serving, elegantly discard the bay leaves.
