Wholesome berry flapjacks with easy blackberry syrup. Make ahead for quick, tasty breakfasts anytime!
Ingredients:
  • 1/3 cup cold water
  • 1 tablespoon cornstarch
  • 2 1/4 cups fresh or frozen (thawed) blackberries
  • 1/4 cup sugar
  • 2 tablespoons real maple syrup
  • 2 cups Original Bisquick™ mix
  • 1 cup buttermilk
  • 2 eggs
  • 1/2 to 3/4 cup fresh or frozen (thawed) blackberries, lightly mashed
Instructions:
  • In a 2-quart saucepan, vigorously whisk together cold water and cornstarch until the cornstarch is fully dissolved. Mix in 2 1/4 cups of blackberries, sugar, maple syrup, and vanilla. Bring the mixture to a boil over medium-high heat, stirring regularly and mashing the blackberries with a fork. Reduce the heat and let it simmer for 5 to 10 minutes. Take it off the heat and let it sit; it will slightly thicken as it cools.
  • Place Bisquick mix in a medium bowl and add buttermilk, eggs, and vanilla. Gently mix until just combined, making sure not to overmix. Fold in the mashed blackberries and allow the mixture to stand for 5 minutes.
  • Preheat a 10-inch skillet or griddle over medium heat, greasing if needed. Pour batter in 1/4 cup portions onto the skillet, cook until bubbles appear on the surface (about 2-3 minutes). Flip and cook for another minute or two. Repeat with the rest of the batter. Serve the hot pancakes with blackberry syrup.
