Ingredients:
  • 500.00 ml plain flour
  • 8.00 gm baking powder
  • 107.50 gm caster sugar
  • 125g white choc bits
  • 2 eggs, lightly beaten
  • 260.00 gm buttermilk
  • 4.40 gm vanilla extract
  • 100g butter, melted
  • 150g punnet blackberries
Instructions:
  • Preheat your oven to 180°C. Lightly grease a muffin pan with 12 half-cup capacity. In a large bowl, sift together flour and baking powder, then add sugar and chocolate chips. Mix until fully combined.
  • In a separate bowl, combine eggs, buttermilk, vanilla, and butter and whisk until smooth.
  • Incorporate butter mixture into flour mixture using a large metal spoon until just combined, then gently fold in the berries.
  • Fill muffin tin with batter. Bake for 25-30 minutes until a toothpick comes out clean. Let sit for 5 minutes, flip onto wire rack, and enjoy!
