Summer blackberry cobbler: Juicy blackberries baked with a golden batter topping - a delicious crowd-pleaser!
Ingredients:
  • 0.5 cup white sugar
  • 2 tablespoons cornstarch
  • 6 cups fresh blackberries
  • 0.25 cup melted butter
  • 2.5 cups all-purpose flour
  • 1.5 cups white sugar
  • 1 tablespoon baking powder
  • 2 cups milk
  • 0.25 cup melted unsalted butter
  • 1 tablespoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.
  • Combine sugar and cornstarch, then coat blackberries with melted butter and the sugar-cornstarch mixture. Spread evenly in the baking dish.
  • Prepare the batter by combining flour, sugar, baking powder, and salt in a mixing bowl. Mix well and then add milk, melted butter, and vanilla. Stir until just combined with a few lumps remaining. Pour the batter over the berries in the baking dish.
  • Cook in the preheated oven until the berries are soft and the crust is beautifully golden brown, about 55 to 60 minutes.
