Indulge in a delightful warm blackberry cobbler with cream cheese dumplings using Original Bisquick® mix.
Ingredients:
  • 2 bags (16 oz each) frozen blackberries
  • 2 cups sugar
  • 1/4 cup butter
  • 3 packages (8 oz each) 1/3-less-fat cream cheese (Neufchâtel), softened
  • 2/3 cup fat-free (skim) milk
  • 2 1/4 cups Original Bisquick™ mix
  • 3/4 cup old-fashioned oats
  • Vanilla ice cream, if desired
Instructions:
  • Preheat your oven to 350°F and lightly grease a 13x9-inch (3-quart) glass baking dish with shortening or cooking spray.
  • In a 3-quart saucepan, simmer blackberries, 1 1/3 cups of sugar, and butter over medium heat until melted and dissolved. Remove from heat and set aside.
  • In a large bowl, use an electric mixer to beat cream cheese and 2/3 cup sugar until fluffy. Mix in milk until smooth. Add Bisquick mix and oats, and stir. Spread two-thirds of the cream cheese mixture (approximately 3 cups) in a baking dish, then evenly spoon the blackberry mixture on top. Finish by dolloping the remaining cream cheese mixture over the blackberry mix.
  • Bake for 35 minutes or until the filling bubbles and the topping turns golden brown. Enjoy warm with a scoop of ice cream.
