Year-round blackberry cobbler made with frozen berries.
Ingredients:
  • cooking spray
  • 1 (16 ounce) package frozen blackberries
  • 2 tablespoons white sugar
  • 1 teaspoon freshly squeezed lemon juice
  • 0.25 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 large egg
  • 5 tablespoons butter, melted
  • frozen whipped topping, thawed
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously coat an 8-inch or 9-inch square baking dish with nonstick cooking spray.
  • Combine frozen blackberries, 2 tablespoons sugar, lemon juice, and vanilla extract in a big bowl, then spread the mixture evenly at the base of the baking dish.
  • In a bowl, mix flour, 1 cup of sugar, and egg until it forms a coarse meal. Sprinkle evenly over the blackberries and then drizzle melted butter on top.
  • Bake until golden and bubbling, 35 to 40 minutes in the preheated oven. Allow to cool for 10 minutes, then serve warm with whipped topping.
