Apple and blackberry cobbler recipe

Indulge in warm and comforting cobbler topped with your favorite ice cream or cream for the ultimate winter treat!
Ingredients:
  • 4 Granny Smith apples, peeled, cored, cut into wedges
  • 500g frozen blackberries
  • 55g caster sugar
  • 42.00 gm lemon juice
  • 5.00 gm cornflour
  • 2.50 gm ground cinnamon
  • 1 tsp vanilla bean paste
  • 110g self-raising flour
  • 55g brown sugar
  • 1.25 gm ground cinnamon, extra
  • 60g chilled butter, chopped
  • 1 Free Range Egg yolk
  • 60ml buttermilk
  • 25g walnut
  • 17.20 gm demerara sugar
  • Vanilla ice cream, to serve
Instructions:
  • In a slow cooker, mix together apples, blackberries, caster sugar, lemon juice, cornflour, cinnamon, and vanilla. Cook covered on high for 2 hours or low for 3 hours until apples are tender and sauce slightly thickens, stirring gently once.
  • In a bowl, mix flour, brown sugar, and extra cinnamon. Add the butter and use your fingertips to rub it into the mixture until it resembles fine breadcrumbs. Create a well in the center and add the egg yolk and buttermilk. Stir with a round-bladed knife until a soft dough forms.
  • Spoon dollops of the buttermilk mixture on top of the apple mixture in the slow cooker. Top with walnuts and demerara sugar. Cover and cook on high for 1 hour (or 1 1/2 hours on low) until the topping is golden brown.
  • Spoon the cobbler into individual bowls and top with a scoop of ice cream.
