Warm up with a comforting apple and berry crumble this winter.
Ingredients:
  • Melted butter, to grease
  • 6 (about 1kg) Granny Smith apples, peeled, cored, thickly sliced
  • 220g (1 cup) caster sugar
  • 60ml (1/4 cup) water
  • 1 cinnamon stick
  • 150g frozen blackberries, thawed according to packet directions, drained on paper towel
  • Vanilla ice-cream (optional), to serve
  • 55g (1/4 cup, firmly packed) brown sugar
  • 50g unsalted butter, at room temperature
  • 40.00 ml plain flour
  • 5 granita biscuits (Arnott's brand), crushed
  • 20.00 gm rolled oats
  • 40.00 ml cornflakes
  • 7.80 gm shredded coconut
Instructions:
  • Preheat your oven to 180°C and generously grease a 1.25-litre (5-cup) ovenproof dish with melted butter.
  • In a large saucepan, combine apples, sugar, water, and a cinnamon stick. Bring to a gentle boil over medium-high heat. Reduce heat and simmer uncovered for 10 minutes, stirring occasionally with a wooden spoon, until apples are tender yet still hold their shape.
  • For the crumble topping, combine sugar, butter, and flour in a bowl. Use your fingertips to blend the butter until the mixture looks like fine breadcrumbs. Mix in the biscuits, oats, cornflakes, and coconut.
  • After draining the apple mixture, remove the cinnamon stick. Spread half of the apple mixture on the bottom of the greased dish. Top it with half of the blackberries. Repeat the layers with the remaining apple mixture and blackberries.
  • Evenly sprinkle the crumble mixture on top and bake in a preheated oven for 25 minutes, or until golden brown. Enjoy with vanilla ice cream, if desired.
