Apple and blackberry crumble ice-cream

Create a simple and delightful summer dessert with fresh apples and blackberries.
Ingredients:
  • 600ml thickened cream
  • 500ml milk
  • 1 vanilla bean, split
  • 6 egg yolks
  • 155g caster sugar
  • 20g butter
  • 1 Granny Smith apple, peeled, cored, finely chopped
  • 16.00 gm brown sugar
  • 2.50 gm ground cinnamon
  • 100g blackberries
  • 70g plain flour
  • 50g rolled oats
  • 55g brown sugar
  • 50g butter, softened
Instructions:
  • Chill a shallow metal container in the freezer. In a medium saucepan over medium heat, combine cream, milk, and vanilla bean. Heat until simmering (avoid boiling). Remove from heat and let sit for 15 minutes to infuse.
  • Combine egg yolks and caster sugar in a large bowl, whisk until thick and pale. Gradually stir in the cream mixture until fully combined. Transfer to a clean saucepan, heat on low, and stir with a wooden spoon for 5-7 minutes until slightly thickened. Remove from heat, discard the vanilla bean.
  • Remove chilled metal container from the freezer. Pour the mixture into the container and cover it with foil. Freeze for 6 hours or until firm.
  • In a large frying pan over medium heat, melt the butter. Add the apple, sugar, and cinnamon. Cook for 5 minutes, stirring occasionally, until the apple is tender. Remove from heat and let cool.
  • Take the container of frozen ice-cream out of the freezer. Use a metal spoon to break it up. Put the broken ice-cream in the food processor and blend until smooth. Transfer the smooth ice-cream to a bowl. Gently mix in the apple mixture and blackberries until just combined. Divide the mixture among serving glasses and freeze for 4 hours until firm.
  • Preheat the oven to 180°C. In a medium bowl, mix flour, oats, and sugar. Add butter, then use your fingers to rub it into the mixture. Spread the crumble mixture on a baking tray. Bake for 10 minutes or until golden brown, turning occasionally. Let it cool to room temperature before using.
  • Gently dust the crumble mixture over the ice cream and enjoy right away.
