Use those extra blackberries to create a quick and delicious biscuit-topped blackberry cobbler. Perfect for a sweet treat after dinner!
Ingredients:
  • For the berry mixture:
  • 4 cups blackberries, rinsed clean
  • 1/2 cup white granulated sugar (less or more to taste, depends on how sweet the berries are and how sweet you would like your cobbler to be)
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cinnamon
  • 1 1/2 tablespoons cornstarch (or instant tapioca)
  • For the cobbler topping:
  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter
  • 1/4 cup milk
  • 1 large egg, lightly beaten
Instructions:
  • Create the berry mixture by combining blackberries, sugar, lemon zest, lemon juice, cinnamon, and cornstarch in a 9x9 baking dish. Mix well to ensure the berries are evenly coated with sugar. Allow the mixture to sit for 30 minutes to macerate and let the sugar dissolve while the berries release their juices.
  • Preheat the oven to 350°F.
  • Prepare the biscuit dough topping by whisking together flour, 3 tablespoons of sugar, baking powder, and salt until combined. Use your fingers or a fork to cut butter into the mixture until it resembles coarse crumbs. Create a well in the center and gently stir in the milk and beaten egg until just moistened.
  • Cover the cobbler: Use a large spoon to scoop up the dough and drop it over the berries in the baking dish to mimic cobblestones.
  • Bake at 350°F for 30 minutes or until the berry mixture bubbles and the topping is golden brown. Serve with whipped cream or vanilla ice cream for a delightful treat.
