Indulge in a summer treat with fresh blackberry cobbler topped with vanilla ice cream or whipped cream.
Ingredients:
  • 2 1/2 cups fresh or frozen (thawed and drained) blackberries (do not use blueberries)
  • 1 cup sugar
  • 1 cup Gold Medal™ All-Purpose Flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1/2 cup butter, melted
  • Cream, whipped cream or ice cream, if desired
Instructions:
  • Combine juicy blackberries with sweet sugar in a bowl and allow them to sit for about 20 minutes until a luscious fruit syrup develops. Preheat the oven to 375°F.
  • Combine flour, baking powder, salt, and milk in a large bowl. Incorporate melted butter until fully mixed. Transfer the batter into an ungreased 8-inch square pan and top with blackberry mixture.
  • Bake until dough rises and turns golden brown, about 45-55 minutes. Enjoy warm with a dollop of cream.
