Blini with salmon and mascarpone

Impress guests with speedy blini featuring smoked salmon, mascarpone, and dill topping.
Ingredients:
  • 46.20 gm buckwheat flour
  • 62.50 ml plain flour
  • 4.00 gm baking powder
  • 1 egg, lightly beaten
  • 171.60 gm buttermilk
  • 25g butter, melted
  • olive oil cooking spray
  • 84.15 gm mascarpone cheese
  • 21.00 gm lemon juice
  • 20.00 ml finely chopped fresh dill
  • 100g smoked salmon, thickly sliced
  • Fresh dill sprigs, to serve
  • Lemon zest, to serve
Instructions:
  • Combine the flours and baking powder in a bowl, sifting them together. Slowly whisk in the egg and buttermilk until the mixture is smooth. Add the butter and stir until well incorporated.
  • Prepare a large frying pan by lightly misting it with oil and heating over medium-high heat. Spoon 2 teaspoons of the mixture for each blini and cook 6 blini at a time for about 2 minutes on each side until golden brown. Place them on a wire rack to cool. Repeat this process until you have made a total of 24 blini.
  • In a bowl, mix mascarpone, lemon juice, and chopped dill. Place blini on a platter. Spread each with a teaspoon of the mascarpone mixture. Top with salmon, dill sprigs, and lemon zest. Serve.
