Vibrant blood orange salad with arugula, red grapefruit, and pomegranate drizzled with an irresistible caramel dressing.
Ingredients:
  • 3 cups arugula
  • 2 chilled blood oranges, peeled and sliced
  • 0.25 small chilled red grapefruit, peeled and segmented
  • 2 tablespoons pomegranate seeds
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon caramel syrup (such as Hershey's®)
  • 0.25 teaspoon sesame oil
  • 2 tablespoons sliced almonds
Instructions:
  • Distribute arugula evenly on 2 plates. Top with blood orange slices, red grapefruit segments, and sprinkle with pomegranate seeds.
  • In a cup, blend balsamic vinegar, caramel syrup, and sesame oil together. Pour the dressing over the salads, sprinkle with almond slices, and serve.
