BLT Cheese Cups

Cheesy cups with bacon, lettuce, and tomato - a delicious low-carb twist on the classic BLT.
Ingredients:
  • 0.75 cup finely shredded Cheddar cheese, divided
  • 1 cup shredded romaine lettuce
  • 1 medium Roma tomato, chopped
  • 4 slices cooked bacon, crumbled
  • 2 teaspoons mayonnaise
  • 1 teaspoon chopped fresh chives
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and prepare a baking sheet with parchment paper.
  • Create two 4-inch circles on the baking sheet using 3 tablespoons of Cheddar cheese for each.
  • Place in the oven already heated and bake for 6 minutes. Take out and allow to rest for 1 to 2 minutes.
  • Place the parchment paper on top of the muffin tin, align one cheese circle with each muffin cup, and gently remove the parchment paper while shaping the cheese around the cup using an offset spatula or knife. Mold the cheese for 5 seconds. Repeat with the second cheese circle.
  • Create 2 additional cheese cups using the remaining cheese, following the same method.
  • Combine the lettuce, tomato, and bacon in a small bowl, then distribute the mixture evenly among the cheese cups.
  • Combine creamy mayonnaise with fresh chives in a bowl, then distribute evenly among the cheese cups. Season generously with salt and pepper.
