Elevate your chicken salad with the delicious flavors of a BLT sandwich.
Ingredients:
  • 250g trussed baby tomatoes
  • 36.40 gm olive oil
  • 4 pancetta slices
  • 1/4 Turkish bread, cut into 2cm pieces
  • 1 garlic clove, crushed
  • 2 (about 400g) Free Range Chicken Breasts
  • 100g baby rocket leaves
  • 60g mayonnaise
  • 21.00 gm lemon juice
Instructions:
  • Preheat your oven to 180°C. Arrange the tomatoes on an oven tray and generously drizzle with 2 teaspoons of oil. Season with salt and pepper. Roast in the oven for 15 minutes until the tomatoes start to soften. Let cool before using.
  • Prepare two oven trays - one for the pancetta and the other for the Turkish bread. Mix the garlic with 1 tablespoon of oil in a small bowl and drizzle over the bread, ensuring it is evenly coated. Bake both the bread and pancetta in the oven, turning them occasionally, until they are golden and crisp, which should take about 10 minutes. Once done, take them out of the oven and let them cool before using.
  • Season the chicken generously with salt and pepper. Heat the remaining oil in a frying pan over medium heat and sear the chicken for 3-4 minutes on each side until golden and fully cooked. Remove from heat and allow to rest for 5 minutes before thinly slicing.
  • On serving plates, artfully lay out rocket, crumbled pancetta, chicken, croutons, and tomatoes. In a bowl, mix mayonnaise, lemon juice, and mustard. Generously drizzle the dressing over the salad and serve promptly.
