BLT guacamole

Elevate guacamole with crispy bacon, juicy tomato, onion, and crunchy lettuce for a delicious BLT twist.
Ingredients:
  • 9.20 gm olive oil
  • 3 short-cut bacon rashers, halved lengthways, thinly sliced
  • 2 avocados, seeds removed
  • 2 baby cos lettuce leaves, halved, shredded
  • 1 small red onion, finely chopped
  • 2 tomatoes, finely chopped
  • 60ml lime juice
  • 40.00 ml fresh coriander, chopped
  • 8 slices Pane di Casa bread, chargrilled
Instructions:
  • In a medium frying pan, heat oil over high heat. Cook bacon, stirring occasionally, until golden and crisp, about 4 minutes. Drain on paper towel.
  • Mash avocado in a bowl, leaving it slightly chunky. Set aside a quarter of the lettuce, onion, tomato, and bacon. Mix in lime juice, coriander, and the rest of the lettuce, onion, tomato, and bacon. Season to taste.
  • Garnish guacamole with the remaining lettuce, onion, tomato, and bacon. Enjoy with freshly baked bread.
