BLTs with Pimiento Cheese

Quick and delicious bacon, lettuce, and tomato grilled cheese sandwich. Ready in 10 minutes.
Ingredients:
  • 1/2 cup reduced-fat pimiento cheese spread
  • 8 slices whole wheat bread
  • 8 slices reduced-fat bacon, crisply cooked
  • 4 leaves green leaf lettuce
  • 12 slices tomato (1/4 inch thick)
  • 1/4 teaspoon freshly ground pepper
Instructions:
  • Evenly slather each slice of bread with a generous coating of delicious pimiento cheese.
  • Layer 2 bacon slices, 1 lettuce leaf, and 3 tomato slices on each of 4 bread slices. Sprinkle with pepper and top with remaining 4 bread slices. Cut sandwiches in half and secure with a toothpick if desired.
