Delicious twist on BLTs: Chicken BLTs with extra goodness!
Ingredients:
  • 4 boneless skinless chicken breast halves (1 1/4 pounds)
  • 1/4 cup Thousand Island dressing
  • 4 whole wheat sandwich buns, split
  • 4 lettuce leaves
  • 8 slices tomato
  • 4 slices bacon, cooked, drained and broken in half
Instructions:
  • In a 10-inch skillet, heat oil over medium-high heat. Cook the chicken for 15-20 minutes, flipping it once, until the juices run clear when the thickest pieces are cut into.
  • Spread the delicious dressing on the freshly cut buns, then layer the juicy chicken, crisp lettuce, ripe tomato, and savory bacon on the bottom halves before crowning them with the top halves of the buns.
