Elevate traditional BLT sandwiches with crispy chicken, creamy avocado, and tangy yogurt.
Ingredients:
  • 3 chicken breast fillets, trimmed
  • olive oil spray
  • 4 rindless eye bacon fillets, trimmed
  • 8 slices multigrain bread, toasted
  • 40.00 ml reduced-fat natural yoghurt
  • 1/2 avocado, thinly sliced
  • 4 cos lettuce leaves, roughly torn
  • 2 tomatoes, thinly sliced
Instructions:
  • Preheat a non-stick frying pan over medium-high heat. Coat chicken with oil and season generously with pepper. Sear each side for 3 to 4 minutes until golden brown and fully cooked. Place on a plate and cover with foil.
  • Place the bacon slices in a hot frying pan and cook for 2 minutes on each side, or until crispy. Meanwhile, thinly slice the chicken.
  • Spread creamy yogurt on slices of toast. Layer 4 slices with tender chicken, crispy bacon, creamy avocado, fresh lettuce, and juicy tomato. Top with the remaining toast slices, yogurt-side down. Cut the sandwiches into quarters and serve.
