Satisfying 20-minute dinner: Grilled chicken and bacon club sandwich.
Ingredients:
  • 2 boneless skinless chicken breasts (1/2 lb)
  • 4 thin slices Canadian bacon
  • 2 kaiser rolls, cut horizontally into thirds
  • 3 tablespoons reduced-fat mayonnaise
  • 4 leaves lettuce
  • 2 slices tomato
Instructions:
  • Preheat gas or charcoal grill. Place each chicken breast between 2 sheets of plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until 1/4 inch thick; remove wrap.
  • Once the grill is hot, lightly oil the grill rack. Place the chicken on the gas or charcoal grill over medium heat and cover. Cook for 6 to 8 minutes, flipping once, until the chicken is cooked through. In the last 5 minutes of cooking, grill the bacon until hot, turning once. For an added touch, toast the kaiser roll pieces on the grill, cut side down, during the last 3 minutes of cooking.
  • Spread mayonnaise on the cut sides of the roll pieces. Cut each chicken breast into 2 pieces. Place 2 chicken pieces on the bottom section of the roll, overlapping if needed. Add a lettuce leaf, tomato slice, and the middle section of the roll. Place 2 Canadian bacon slices on the middle roll section, top with another lettuce leaf, and the top section of the roll. Gently press the sandwich and secure with 2 long toothpicks. Cut the sandwiches in half between the toothpicks.
