No-cook chicken, bacon, and veggie kabob sandwiches ready in 30 minutes for a delicious dinner!
Ingredients:
  • 1/4 cup mayonnaise or salad dressing
  • 2 tablespoons purchased Thousand Island salad dressing
  • 2 teaspoons sweet pickle relish, well drained
  • 9 slices sandwich bread, toasted
  • 6 lettuce leaves
  • 6 slices cooked chicken or turkey (about 6 oz.)
  • 6 slices tomato
  • 6 slices crisply cooked bacon
  • Cherry tomatoes
  • Pickle chunks
  • 4 (10-inch) wooden skewers
Instructions:
  • Combine mayonnaise, Thousand Island dressing, and pickle relish in a small bowl. Mix thoroughly. Spread the mixture onto one side of each toasted bread slice.
  • Place one lettuce leaf and two slices of chicken on each of the three slices of toasted bread. Top each with a second slice of toast, spread side down. Add one lettuce leaf, two tomato slices, and two bacon slices on top of each. Finish by adding the third slice of toast, spread side down. Cut each sandwich diagonally into 4 pieces.
  • Thread a skewer by alternating 3 sandwich pieces with cherry tomatoes and pickle chunks for each kabob.
