Elevated chicken and rice casserole with savory canned mushrooms and flavorful pimentos.
Ingredients:
  • 3 cups cooked rice
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 1.6666667461395 cups half-and-half
  • 1.5 cups chicken broth
  • 0.25 teaspoon rosemary
  • 1 teaspoon salt
  • 3 cups diced cooked chicken
  • 1 (4 ounce) can sliced mushrooms, drained
  • 0.33333334326744 cup chopped green bell pepper
  • 1 (2 ounce) jar pimentos
Instructions:
  • Preheat your oven to 350°F (175°C) and grease a 2 1/2-quart casserole dish.
  • Evenly layer the rice at the bottom of the casserole dish.
  • In a saucepan, melt butter over medium heat, then stir in flour until frothy, about 2 to 3 minutes. Add half-and-half, chicken broth, rosemary, and salt. Cook, stirring constantly, until slightly thickened, about 5 minutes. Mix in cooked chicken, mushrooms, bell pepper, and pimentos, and heat until chicken is hot, about 2 to 3 minutes. Pour over rice and gently stir to combine.
  • Bake in a preheated oven until everything is heated through and the rice is perfectly tender, approximately 30 minutes.
