Blue cheese, pumpkin and date bites

Impress guests with savory blue cheese, pumpkin, and date appetizer bites.
Ingredients:
  • 1kg butternut pumpkin, peeled
  • 6 fresh dates, seeded, finely chopped
  • 100g blue cheese, crumbled
  • 8 slices prosciutto
  • Fresh thyme sprigs, to serve
Instructions:
  • Preheat your oven to 200C (180C fan-forced) and line a baking tray with parchment paper.
  • Cut the pumpkin into 24 even 3cm pieces, then mix the dates and cheese in a small bowl.
  • Cut each slice of prosciutto into thirds lengthwise. Top each piece of pumpkin with 1 teaspoon of cheese mixture. Wrap a piece of prosciutto around each pumpkin piece to enclose the cheese. Arrange on the prepared tray and bake for 15 minutes, or until the prosciutto is golden and crisp. Cover the tray with foil and bake for an additional 20 minutes, or until the pumpkin is tender.
  • Garnish pumpkin with fragrant thyme before serving.
