Elevate store-bought pizza with decadent maple-glazed pumpkin and creamy blue cheese topping for a gourmet twist on a classic dish.
Ingredients:
  • 500g Jap (Japanese) pumpkin
  • 1 tsp chilli flakes
  • 1 tsp cumin seeds
  • 60ml olive oil
  • 60ml maple syrup
  • 2 pizza bases
  • 100g grated mozzarella
  • 100g mild blue cheese, crumbled
  • 100g rocket leaves
  • 20.00 ml balsamic vinegar
Instructions:
  • Preheat your oven to 200°C and grease a baking tray.
  • Slice the pumpkin into 1.5cm-thick pieces. Arrange on a baking tray, coat with chili, cumin, oil, and syrup, then season with salt and pepper. Roast for 20 minutes, flip the slices, and roast for another 10 minutes.
  • Next, arrange pizza bases on a large baking tray and evenly distribute the mozzarella on top. Bake in the oven during the last 6-8 minutes of pumpkin cooking, until the cheese is melted and the bases are crispy. Then, place the pumpkin slices on the bases, sprinkle with blue cheese, and bake for an additional 2-3 minutes. Top with fresh rocket. Finally, mix the balsamic vinegar into the pumpkin roasting juices, and drizzle over the pizzas before serving.
