Spicy Roasted Nut Trail Mix

Irresistible fall snack mix with spiced maple glaze, pretzels, nuts, cranberries, and pumpkin seeds from Betty Crocker Snacks cookbook. Perfect for football or Friendsgiving, gluten-free and vegetarian friendly.
Ingredients:
  • 2 tablespoons pure maple syrup or maple-flavored syrup
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground red (cayenne) pepper
  • 1 tablespoon butter
  • 1 cup salted mixed nuts
  • 1/2 cup gluten free pretzels
  • 1/4 cup sweetened dried cranberries
  • 1/4 cup roasted salted hulled pumpkin seeds (pepitas)
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Combine all Glaze ingredients in a medium microwavable bowl. Microwave on high for 30 to 40 seconds until bubbly and stir until butter is almost melted.
  • Combine all Trail Mix ingredients, stirring until evenly coated, without adding the cilantro.
  • Microwave on high for 2 minutes uncovered, then stir. Continue microwaving for about 2 minutes more until evenly coated and sticky. Stir in cilantro and spread onto waxed paper to cool for about 10 minutes.
