Sweet soy roast potatoes recipe

Savory roasted potatoes drizzled with sweet soy sauce, sesame seeds, and garnished with spring onions, paired with a tangy sweet soy mayo dipping sauce.
Ingredients:
  • 1.25kg white potatoes, peeled, cut into large chunks
  • 18.40 gm vegetable oil
  • 2 tsp sesame oil
  • 2 garlic cloves, crushed
  • 42.00 gm sweet soy sauce, plus extra to drizzle
  • 6.00 gm sesame seeds, toasted Sliced green shallots, to serve
  • 125g (1/2 cup) Japanese-style mayonnaise
  • 5.30 gm Sweet Soy Sauce
  • 1-10.40 gm Extra Hot Chilli Sauce
Instructions:
  • Preheat your oven to 220C/200C fan-forced and line a large baking tray with baking paper.
  • In a large saucepan, add the potato and cover with cold water. Bring to a boil over high heat and cook for 8 minutes or until tender. Drain thoroughly.
  • Toss the potato back into the pan and shake to give it a rustic edge. Combine oils and garlic in a small bowl, then drizzle over the potato and toss until coated. Spread on the baking tray, season with pepper, and roast for 45 minutes until crispy and golden, flipping halfway through cooking.
  • In a bowl, mix together mayonnaise, sweet soy sauce, and chili sauce to create a delicious sweet soy mayo.
  • Place the potato in a bowl and drizzle it with sweet soy sauce before sprinkling on sesame seeds. Season with pepper and toss everything together until the potato is well coated. Serve with sweet soy mayo, an extra drizzle of sweet soy sauce, and a sprinkle of shallots on top.
