Orange soy-glazed sweet potato with nori

Roasted sweet potatoes glazed with orange soy sauce, topped with nori - a healthy, flavorful side.
Ingredients:
  • 1kg orange sweet potato, peeled, cut into 5cm long wedges
  • 36.80 gm vegetable oil
  • 2 tsp finely grated orange rind
  • 86.63 gm orange juice
  • 65.63 gm soy sauce
  • 16.00 gm brown sugar
  • 20.00 ml sesame oil
  • 3 garlic cloves, crushed
  • 3cm piece fresh ginger, finely grated
  • 12.00 gm sesame seeds, toasted
  • 1 sheet nori, torn into small pieces
  • 3 green onions, thinly sliced diagonally
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a large roasting pan with baking paper.
  • Place the sweet potato in the pan and generously drizzle with oil. Roast in the oven for 45 minutes or until beautifully golden and fork-tender.
  • In a small saucepan over medium heat, mix orange rind, orange juice, soy sauce, sugar, oil, garlic, and ginger. Stir and cook for 3 minutes until the sugar dissolves. Bring to a boil, then reduce heat to medium-low and simmer for 8 to 10 minutes until thickened. Remove from heat when done.
  • Drizzle the orange mixture over the sweet potato and gently mix to coat. Roast for an additional 5 minutes or until sticky. Sprinkle with sesame seeds, nori, and onion before serving.
