Treat Dad with succulent beer and barbecue marinated ribs this Father's Day.
Ingredients:
  • 1 brown onion, chopped
  • 2kg beef short ribs
  • 500.00 ml beef consomme or Massel beef stock
  • 250.00 ml Italian tomato passata sauce
  • 70.63 gm barbecue sauce
  • 375ml can lager beer
  • 5 large fresh marjoram sprigs
  • Orange sweet potato, boiled, mashed (see tip), to serve
  • Marjoram leaves, to serve
Instructions:
  • Preheat your oven to 200°C. Spread a layer of onions at the bottom of a large roasting pan, then place the ribs on top. Season generously with salt and pepper. Roast for 30 minutes or until the onions are nicely browned. Remove and drain any excess fat.
  • Lower the oven temperature to 130°C. In a jug, mix consomme, passata, barbecue sauce, beer, and marjoram sprigs. Pour the mixture over the ribs. Roast uncovered for another 2 1/2 hours, stirring occasionally, until the ribs are browned and tender.
  • Spoon mashed potatoes onto plates. Top with ribs, drizzle with pan juices, sprinkle with marjoram leaves, and serve.
