Tender slow-cooked beef brisket on fluffy potato buns - perfect for effortless party prep.
Ingredients:
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup ketchup
  • 0.5 cup beer
  • 0.5 cup white vinegar
  • 4 drops liquid smoke flavoring
  • 0.5 teaspoon salt
  • 1.5 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 cup brown sugar
  • 4 pounds beef brisket
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 16 potato buns, or as needed
Instructions:
  • Add the onion, garlic, ketchup, beer, vinegar, Worcestershire sauce, and liquid smoke in a large slow cooker. Combine salt, pepper, chili powder, paprika, oregano, and brown sugar. Rub the spice mixture all over the beef brisket, then place it in the slow cooker. Sprinkle the remaining spice mixture on top.
  • Slow cook while the flavors meld and the beef becomes effortlessly tender and ready to shred with just a touch from your forks, 10 to 12 hours.
  • Take out the beef from the slow cooker and transfer it to a large bowl. Skim off the fat from the sauce in the slow cooker and discard it. Transfer around 2 cups of the sauce from the slow cooker to a saucepan. Heat it over medium heat until simmering. Mix cornstarch with water, then add it to the simmering sauce. Cook and stir for 5 to 10 minutes until the sauce thickens. While the sauce thickens, shred the meat into small pieces using two forks.
  • Transfer the thickened sauce and remaining sauce from the slow cooker into a blender, filling it no more than halfway. Secure the lid with a kitchen towel and pulse until smooth. Alternatively, use a stick blender to puree the sauce directly in the slow cooker.
  • Combine the shredded beef with the pureed sauce in the slow cooker, then serve the beef on the potato buns using tongs.
