Delicious slow-cooked barbecue ribs - perfect for any weather. Prep ahead, let the slow cooker work its magic, and enjoy a mouthwatering meal anytime, from weekdays to weekends and game days.
Ingredients:
  • 3 1/2 pounds pork loin back ribs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons liquid smoke
  • 2 garlic cloves, chopped
  • 1 medium onion, sliced
  • 1/2 cup cola
  • 1 1/2 cups barbecue sauce
Instructions:
  • Grease the inside of a 4- to 5-quart slow cooker with cooking spray.
  • Peel off the inner skin from the ribs and cut them into 4-inch pieces. Combine brown sugar, salt, pepper, liquid smoke, and garlic; massage the mixture into the ribs. Alternate layers of ribs and onion in a slow cooker. Pour cola over the ribs.
  • Slow cook the ribs covered on a low heat setting for 8 to 9 hours until tender. Take the ribs out of the slow cooker and discard the liquid.
  • First, transfer the barbecue sauce into a shallow bowl. Submerge the ribs in the sauce, ensuring they are well coated. Arrange the ribs in the slow cooker and drizzle any leftover sauce on top. Cover and let it cook on a low heat setting for 1 hour. Keep in mind that this recipe was developed for slow cookers with heating elements in the side and bottom, not for ones that stand solely on a heated base. If using the latter, refer to the manufacturer's instructions for proper layering and temperature settings.
