Golden syrup and bacon roast potatoes recipe

Elevate roast potatoes with golden syrup and bacon for a delicious salty-sweet twist.
Ingredients:
  • 1kg medium potatoes, peeled, halved
  • 4 streaky bacon rashers, finely chopped
  • 60ml (1/4 cup) golden syrup
  • Fresh rosemary sprigs, to serve (optional)
Instructions:
  • Preheat oven to 200C/180C fan forced. Boil the potato in a covered saucepan until partially cooked, about 5 minutes. It should be barely tender when pierced with a skewer.
  • After draining the potatoes, place them back in the pan and drizzle with oil. Give the saucepan a good shake to coat the potatoes. Spread them out in a single layer on a large baking tray, making sure not to overlap. Bake for 1 hour, flipping halfway through, until they are crispy and golden brown.
  • Cook the bacon in a large frying pan over medium-high heat for 5 minutes until crispy. Stir in maple syrup. Add the mixture to the roasted potatoes and coat them well. Season with sea salt flakes and sprinkle with rosemary leaves, if desired. Serve promptly.
