"Make a quick and easy blue cheese chicken dish to impress your special someone on Valentine's Day - sure to become a favorite!"
Ingredients:
  • 1.5 (8 ounce) packages cream cheese, softened
  • 1 cup crumbled blue cheese
  • 1 egg
  • 2 cups bread crumbs
  • 2 skinless, boneless chicken breasts, halved and pounded into 1/2-inch thickness
  • 3 cups cooked white rice
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Combine the creamy cream cheese and tangy blue cheese in a bowl. In another bowl, whisk the egg. Fill a third shallow bowl with bread crumbs.
  • Coat each chicken piece with the cheese mixture, then roll them around the filling, dip in egg, and coat with bread crumbs. Place the chicken rolls on a baking sheet or pan.
  • Roast until cooked through and no longer pink in the center, 20 to 30 minutes, ensuring the juices run clear. Use an instant-read thermometer to confirm internal temperature reaches at least 165 degrees F (74 degrees C), and the cheese mixture will ooze slightly. Plate over a bed of cooked rice before serving.
