Blue Cornmeal Muffins

Delicious Southwest-style blue cornmeal muffins ready in just 40 minutes.
Ingredients:
  • 1 1/4 cups blue or yellow cornmeal
  • 1 cup Gold Medal™ all-purpose flour
  • 1/4 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon baking soda
  • 1 1/2 cups buttermilk
  • 2 eggs
Instructions:
  • Preheat your oven to 450°F. Grease only the bottoms of 14 medium muffin cups with shortening or use paper baking cups. In a large bowl, combine all ingredients and beat vigorously for 30 seconds. Fill muffin cups to about 7/8 full.
  • Bake for 20-25 minutes until beautifully golden. Remove from pan right away and serve warm.
