Award-winning homemade creamy caramels recipe.
Ingredients:
  • cooking spray (such as Pam®)
  • 2 cups white sugar
  • 1.5 cups heavy whipping cream, divided
  • 0.75 cup corn syrup
  • 0.33333334326744 cup butter
  • 1 teaspoon white vinegar
  • 0.25 teaspoon salt
  • 1 cup chopped walnuts
  • 2 teaspoons vanilla extract
Instructions:
  • Grease a large loaf pan or 8-inch square baking dish with cooking spray.
  • Combine white sugar, 3/4 cup cream, corn syrup, butter, vinegar, and salt in a heavy pot and bring to a boil. Add the remaining cream and continue cooking, stirring constantly, until the caramel reaches 244 degrees F (117 degrees C) or forms a firm but pliable ball when dropped into cold water, about 10 to 20 minutes. Remove from heat and let cool briefly.
  • Mix walnuts and vanilla extract into the luscious caramel, then pour it into the prepared baking dish. Allow it to cool completely for at least 1 hour. Once cooled, invert the baking dish onto a flat surface to release the caramel. Finally, slice the caramel into delectable servings.
