Ingredients:
  • 4 x 180g blue-eye cod, skin removed
  • 31.50 gm lemon juice
  • 18.20 gm olive oil
  • 40.00 ml fresh oregano leaves
  • 3 cloves garlic, sliced
  • 100g unsalted butter
Instructions:
  • 1. Heat oil in a non-stick pan over medium-high heat. Season fish with salt and pepper, then add to the pan. Cook each side for 2-3 minutes until cooked through. Cover with foil to keep warm.
  • After wiping the pan clean with a paper towel, return it to medium heat. Melt the butter until it turns a golden brown hue, then toss in the garlic and oregano. Cook for an additional 30 seconds before taking it off the heat. Finish by adding lemon juice and giving it a good stir.
  • Plate the fish, generously drizzle with zesty lemon and oregano sauce. Accompany with a lemon wedge and a side salad.
