Cajun-crusted blue eye cod

Zesty mango-avocado salsa complements Cajun-spiced fish.
Ingredients:
  • 4 blue eye cod cutlets or fillets
  • olive oil
  • 55g packet Cajun Grill Seasoning
  • 1 avocado, peeled and chopped
  • 1 mango, peeled and finely chopped
  • 1 lebanese cucumber, finely chopped
  • 1 red onion, finely chopped
  • 20.00 ml capers
  • juice of 1 lemon
Instructions:
  • Coat fish lightly with oil and generously sprinkle both sides with seasoning mix.
  • Cook fish on the grill for 3 to 5 minutes per side or bake in a preheated 190°C oven for approximately 15 minutes, or until fully cooked.
  • Make the salsa by mixing all the ingredients together. Drizzle the salsa over the hot fish and serve alongside a fresh salad.
