Air fryer popcorn fetta with maple hot sauce

Cajun crusted feta bites with spicy maple dip - a gourmet twist on a classic take-out favorite!
Ingredients:
  • 265g jar Castello marinated fetta cubes in oil with garlic and herbs
  • 20.00 gm cornflour
  • 7.50 gm cajun seasoning
  • 1 egg
  • 165.00 ml panko breadcrumbs
  • 20.00 ml chopped fresh coriander, plus extra leaves to serve
  • 54.00 gm maple syrup
  • 20.00 ml sriracha
Instructions:
  • Separate feta and save 1 tablespoon of oil for sauce.
  • In a bowl, mix cornflour and cajun seasoning. In another bowl, whisk the egg. In a separate bowl, combine breadcrumbs and coriander, then season with salt and pepper. Coat feta in cornflour mixture in batches. Dip in egg, then coat in breadcrumb mixture. Place on a plate and freeze for 1 hour.
  • In a small saucepan over medium-low heat, combine maple syrup, sriracha, and reserved oil. Whisk continuously for 3 to 4 minutes until the sauce begins to simmer and thicken slightly. Remove from heat and keep warm.
  • Preheat the air fryer to 180C. Arrange the feta cubes in a single layer in the basket. Air fry for 3 to 4 minutes until golden and slightly softened. Serve with maple hot sauce and a sprinkle of fresh coriander leaves.
