Blueberry and orange compote served over creamy ice cream.
Ingredients:
  • 20g (1 tbsp) butter or margarine
  • 55g (1/4 cup) caster sugar
  • 1 orange, rind finely grated, juiced
  • 300g frozen blueberries (Creative Gourmet brand) - see note 4
  • Country Style Vanilla Ice Cream Slices (Norco brand), to serve
Instructions:
  • In a medium frying pan over medium-low heat, melt the butter or margarine with caster sugar and orange juice until syrupy, stirring for 2-3 minutes. Add orange rind and blueberries, simmer for 3-4 minutes until berries are defrosted. Remove from heat, cool for 10 minutes. Serve warm blueberries over ice cream slices in bowls.
