Blueberry Almond Scones

Blueberry almond citrus scones - a delightful treat for tea time or solo enjoyment.
Ingredients:
  • 2 tablespoons fresh blueberries
  • 2 tablespoons blueberry preserves
  • 1 tablespoon pomegranate juice
  • 5 tablespoons unsalted butter
  • 0.75 cup white sugar
  • 1 teaspoon almond extract
  • 2 teaspoons lemon zest
  • 0.5 teaspoon lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 cup chopped almonds
  • 1 cup fresh blueberries
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and cover two baking sheets with parchment paper.
  • Microwave 2 tablespoons of blueberries in a bowl until very soft, approximately 20 seconds. Mix in the preserves and pomegranate juice, then set aside.
  • Using an electric hand mixer, cream together the butter and sugar in a small bowl. Beat in the egg, then add the milk, almond extract, lemon zest, lemon juice, and blueberry mixture. Beat until well combined.
  • In a bowl, combine sifted flour, baking powder, baking soda, and salt. Slowly incorporate the flour mixture into the blueberry mixture while beating until a soft dough forms. Gently fold in almonds and 1 cup of blueberries. Using rounded teaspoonfuls, drop the dough onto lined baking sheets.
  • Bake until beautifully golden, for around 15 minutes.
