Protein-packed French toast bake with whole wheat bread - a nutritious and simple make-ahead breakfast option to kickstart your day.
Ingredients:
  • cooking spray
  • 8 large eggs
  • 8 large egg whites
  • 2 cups milk
  • 0.33333334326744 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 1 (1 pound) loaf whole wheat bread, cubed
  • 2 cups fresh blueberries
  • 0.33333334326744 cup sliced almonds
  • 2 tablespoons dark brown sugar
Instructions:
  • Grease a 9x13-inch baking pan generously with cooking spray.
  • Combine eggs, egg whites, milk, maple syrup, vanilla, and cinnamon in a large bowl and whisk until smooth.
  • In the prepared pan, layer bread cubes followed by pouring over the egg mixture. Evenly distribute blueberries on top and sprinkle with almonds and brown sugar. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C) before baking.
  • Uncover the baking pan and bake in the preheated oven until golden brown, for 40 to 50 minutes.
