Blueberry and nut loaf

Indulge in a delightful blueberry and pecan nut loaf.
Ingredients:
  • 112.50 gm self-raising flour
  • 75.00 gm wholemeal self-raising flour
  • 2.50 gm mixed spice
  • 135.00 gm brown sugar
  • 250.00 ml fresh blueberries (or frozen blueberries)
  • 125.00 ml pecans, chopped
  • 62.50 ml oat bran
  • 40.00 ml pepitas
  • 125g low-fat spread, melted
  • 128.75 gm low fat milk
  • Butter, or margarine, for serving, if desired
Instructions:
  • Preheat your oven to a toasty 180C and give a gentle spritz of oil to a 10 x 20cm loaf pan.
  • Combine the flours and spice in a bowl, keeping the husks in. Add in the sugar, berries, nuts, bran, and half of the pepitas.
  • Combine the spread, milk, and eggs in a bowl and whisk together. Gently fold the wet mixture into the dry ingredients until just combined.
  • Pour mixture into the pan and spread evenly. Top with remaining pepitas. Bake for 50-55 minutes or until a skewer comes out clean when inserted.
  • Allow the dish to cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
  • Enjoy the dish by serving it sliced and optionally spread with butter or margarine. Keep fresh by storing in an airtight container.
