Blueberry and passionfruit muffins

Elevate traditional blueberry muffins with a tropical twist of passionfruit.
Ingredients:
  • 150.00 gm self-raising flour
  • 250.00 ml plain flour
  • 161.25 gm caster sugar
  • 75.90 gm vegetable oil
  • 128.75 gm milk
  • 170g low-fat blueberry yoghurt
  • 2 eggs, lightly beaten
  • 4.40 gm vanilla essence
  • 4 passionfruit, halved
  • Icing sugar mixture, to serve
Instructions:
  • Preheat the oven to 190°C/170°C fan-forced, then line a 12-hole muffin pan with paper cases.
  • In a bowl, mix flours and sugar, then create a well in the center. Add oil, milk, yogurt, egg, and vanilla. Stir until just combined, then gently mix in the passionfruit.
  • Divide the batter evenly among the paper cases. Bake for 20 to 22 minutes until golden and firm to the touch. Let sit in the pan for 5 minutes, then transfer to a wire rack to cool. Dust with icing sugar and serve.
