Buttermilk blueberry bread with sweet topping: A delightful breakfast or dessert.
Ingredients:
  • 1.75 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 cup white sugar
  • 0.5 cup unsalted butter, at room temperature
  • 2 large eggs
  • 0.5 cup buttermilk
  • 1 cup fresh blueberries, or more to taste
  • 2.5 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a 9x5-inch loaf pan with butter.
  • In a medium bowl, whisk together the flour and baking powder, setting it aside for later use.
  • In a small bowl, cream together sugar and butter for 1 minute. Beat in eggs, buttermilk, and vanilla extract until combined. Stir in dry ingredients until mixed. Gently fold in blueberries with a spatula. Transfer batter to the prepared bread pan.
  • Combine sugar, flour, and butter in a bowl, rubbing the mixture between your fingers until the butter is evenly incorporated. Sprinkle the topping over the batter.
  • After baking in the preheated oven for 55 to 60 minutes or until a toothpick comes out clean, allow the loaf to cool for 10 minutes. Then, gently run a knife along the edges, remove the loaf from the pan, and let it cool completely on a wire rack.
