Blueberry buckle: Moist coffee cake with fresh blueberries and cinnamon streusel topping.
Ingredients:
  • 0.75 cup white sugar
  • 0.25 cup shortening
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 cup milk
  • 2 cups fresh blueberries
  • 0.5 cup white sugar
  • 0.33333298563957 cup all-purpose flour
  • 0.25 cup butter, softened
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 375°F (190°C) and generously grease an 8x8-inch pan.
  • In a large bowl, mix together sugar, shortening, and egg until light and fluffy. In a separate bowl, combine flour, baking powder, and salt. Gradually add the flour mixture to the sugar mixture in two parts, alternating with milk, gently stirring after each addition. Carefully fold in blueberries, then transfer the batter to the prepared pan.
  • Prepare the topping by blending sugar, flour, butter, and cinnamon together in a bowl using your hands until a crumbly texture forms. Sprinkle evenly over the cake batter.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 30-40 minutes.
