Eastern Canadian blueberry buckle: Fresh blueberries topped with cinnamon streusel, a taste of wild summer.
Ingredients:
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 cup shortening
  • 0.33333334326744 cup milk
  • 2 cups fresh blueberries
  • 0.33333334326744 cup all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup softened butter
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you grease and flour a 9-inch square baking dish. In a mixing bowl, whisk together 1 cup flour, baking powder, and salt.
  • Cream the shortening and 1/2 cup sugar using an electric mixer in a large bowl until fluffy. Incorporate the egg. Alternate pouring the flour mixture with milk into the bowl, mixing until just combined. Transfer the batter into the prepared pan and evenly distribute the blueberries on top. In a separate bowl, use a fork to combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter until crumbly. Sprinkle the mixture evenly over the blueberries.
  • Bake in the preheated oven for about 35 minutes or until a toothpick inserted into the buckle comes out clean. Let it cool slightly before serving warm.
