Cozy hodge podge stew: beans, potatoes, carrots in savory bacon broth.
Ingredients:
  • 6 slices bacon
  • 2 tablespoons butter
  • 1 small onion, roughly chopped
  • 1 small garlic clove
  • 1 cup fresh green beans, trimmed and snapped
  • 1 cup fresh wax beans, trimmed and snapped
  • 1.5 cups baby carrots
  • 1 cup low-salt chicken broth
  • 1/4 cup water
  • 12 small whole new potatoes
  • 0.5 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 0.5 cup water
Instructions:
  • Fry bacon in a spacious skillet over medium-high heat until perfectly golden, approximately 10 minutes. Pat dry on paper towels, then chop into pieces and keep aside.
  • Melt butter in a large pot over medium heat. Add onion and garlic. Cook until garlic has softened and onion begins to turn golden brown, about 8 minutes. Transfer mixture to a small bowl. Remove garlic clove, mash, and add back to the bowl.
  • Combine beans and carrots in a pot, then add chicken broth and enough water to cover the vegetables; season with salt. Bring to a boil, then simmer over medium-low heat for 15 minutes.
  • Add in the potatoes and simmer until they are tender, approximately 30 minutes. Mix in the garlic-onion mixture, cream, and the remaining 4 tablespoons of butter, then bring the mixture back to a simmer.
  • Combine flour with a 1/2 cup of water until dissolved, then stir into the soup. Simmer and stir until soup thickens, approximately 10 to 15 minutes. Garnish with crumbled bacon and serve.
