Deliciously moist eggless Maritime cake, created during rationing. Perfect with tea and Cheddar cheese.
Ingredients:
  • 2 cups water
  • 2 cups raisins
  • 1 cup light molasses
  • 0.66666668653488 cup shortening
  • 1 tablespoon ground cinnamon
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare pans by greasing and dusting with flour.
  • In a saucepan, combine water, raisins, molasses, sugar, and shortening. Bring the mixture to a boil, then simmer over low heat for about 5 minutes until the raisins are plump. Let it cool before using.
  • Combine flour, baking soda, and cinnamon in a bowl and whisk until blended. Add the flour mixture to the raisin mixture and mix until fully incorporated. Transfer the batter to the prepared baking pan.
  • Bake until a toothpick inserted in the center comes out clean, approximately 1 hour in the preheated oven.
