Elevate your breakfast with festive Coles Christmas Tree Crumpets adorned with creamy ricotta, sweet blueberries, zesty lemon, and fragrant mint.
Ingredients:
  • 75g caster sugar
  • 125g blueberries
  • 100g fresh ricotta
  • 60ml thickened cream
  • 12.00 gm icing sugar mixture
  • 1 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • 282g pkt Christmas Tree Crumpets, toasted
  • Lemon zest, to serve
  • Mint leaves, to serve
Instructions:
  • In a small saucepan over medium heat, meld together sugar, 1/4 cup (60ml) water, and half of the blueberries. Stir until the sugar dissolves and it simmers. Let the syrup slightly thicken on low heat for 5 minutes. Allow it to cool for 5 minutes. Gently fold in the rest of the blueberries.
  • Mix together the ricotta, cream, powdered sugar, lemon zest, and lemon juice in a small bowl.
  • Transfer the crumpets onto serving plates, generously spoon over the ricotta mixture, drizzle with the blueberry syrup, and finish with a sprinkle of lemon zest and fresh mint leaves.
